Ingredients:
2 cups Strawberries
1 cup Blueberries
1 cup mango/Pineapple
Optional: 1/2 cup Kiwi, 3 mandarine oranges, 1 banana
Dressing:
1/8 cup Honey
1.5 tbsp Lime Juice (~2 limes)
Optional: 1 tsp lime zest
Instructions:
Chop your fruit into bite sized pieces & peel and wedge your mandarins (if using).
Add all the fruit into a medium sized mixing bowl.
Zest a lime using the zesting side of a cheese grater. Zest 1-2 limes to get 1.5 tbsp of juice.
In a small mixing bowl, add together the honey, lime zest & lime juice. Stir it together.
Pour the lime dressing over the fruit and stir together gently.
Allow the fruit salad to cool in the fridge for at least 30 mins before serving.
Notes:
You can use frozen fruit for fruit salad as well. Allow the fruit to thaw fully in the fridge before preparing the salad.
The zesting side of a cheese grater is the side that looks like star-shaped spikes. If you don't have one, the recipe is delicious without the lime zest as well.
Store in the fridge for up to 4 days.
