Ingredients:
6 cups Potatoes (peeled and diced)
1 + 1/2 cups Onion (chopped)
1 + 1/4 cups Carrots (peeled and chopped)
1 cup Celery (diced)
3 + 3/4 cups Chicken Broth
1/3 cup Butter
1/3 cup All-Purpose Flour
2 + 1/2 cups Milk
1/2 cup Sour Cream
Salt and Pepper (to taste)
Optional: 1 cup shredded cheddar cheese, 1.5 cups diced ham
Instructions:
In a large pot, combine the potatoes, carrots, celery, onions, chicken broth, salt, & pepper.
Cover pot and bring to a medium-high heat. Once it reaches a boil, cook for 15-20 mins.
While the soup is cooking, melt butter in a saucepan on medium heat. Once melted, ass the flour and cook for 1 min, whisking continuously. While whisking, slowly add in the milk. Continue until the mixture beings to thicken.
Add the thickened mixture into the soup once the potatoes are soft. The potatoes should start to breakdown while stirring.
Add sour cream and mix well.
Serve and enjoy!
Notes:
You can top with green onions or chives to add some freshness.
You can add seasonings of your choice to increase the flavour if desired!
Can store in the fridge for up to 4 days.
Does not freeze well.
