Ingredients
2-3 pounds Rutabaga
2 tsp Salt
1/3 cup Butter
1/2 tsp ground black pepper
Instructions
Peel and chop rutabagas into large chunks
Place rutabaga chunks into large pot and cover them with water, add 1 tsp salt into the water
Bring to a boil. Once boiling, reduce heat, cover, and simmer for 25-30 mins or until fork tender.
Drain rutabagas and let them air dry
Mash rutabaga with a potato masher, along with the butter, remaining salt, and pepper.
Serve warm and enjoy!
Notes
You can add other root vegetables to the mash such as potatoes, carrots, parsnips
You can replace some of the butter with sour cream or greek yogurt
If you find the mash too bitter from the rutabaga, try adding 1 tbsp of sugar to the recipe
