Ingredients
5 cups Cooked Pasta
1 Zucchini
1 tbsp Oil
Salt and pepper
4 tbsp Pesto
2 cups Spinach
Instructions
Fill a medium pot with water and place on the stove on medium heat to bring to a boil.
While water is heating, cut up the zucchini. Cut off the top and bottom to make flat edges. Then cut down the middle lengthwise. Lay the flat part of the zucchini down and cut into ~1/2 cm pieces that look like half circles.
Heat up a large pan on the stove to medium-low. Fry the zucchini in the olive oil until tender (~7 mins) and season with salt and pepper. Add the noodles to boiling water and follow packaging instructions for cooking time.
When the zucchini is done, add in the spinach and the hot (strained) noodles. Allow the spinach to wilt and stir in the pesto.
Top with parmesan cheese if desired.
Notes
You can add ground meat to this recipe to add protein to the meal. Pan fry it and mix it in!
Pesto comes in red or green. Both work well with this recipe. Look for pesto near the pasta sauce section of the grocery store.
You can top with reed chili flakes to add some spice!
