Ingredients:
1 Tortilla
1/2 cup Chicken (chopped)
1/3 cup Cheese (shredded)
2 Tbsp BBQ Sauce OR Pesto
Optional: Red Onion (chopped), Bell Pepper (chopped), Spinach, Mushrooms
Instructions:
Preheat your oven to 350 degrees F and line a baking sheet with parchment paper.
Chop up your chicken into small bite sized pieces, grate your cheese, and chop up any desired veggies.
Place your tortilla on the prepared baking sheet. Spread your choice of sauce (BBQ, pesto, etc.) over the whole tortilla.
On one half of the tortilla, add the chicken, cheese & veggies.
Fold the emply side of the tortilla over the full side. Place in the oven and bake for ~10 minutes or until the cheese is melted and the tortilla is slightly crispy.
Allow to cool slightly so that cheese sets, cut into pieces, and enjoy!
Notes:
This recipe can be made with rotisserie chicken or any type of left over chicken, as well as beef or any other desired type of meat.
This recipe can be made vegetarian by only adding cheese and vegetables.
You can serve the quesadillas with sour cream, salsa, fresh avocado, etc.
