Ingredients
1 very ripe banana
1 egg
2 Tbsp Maple Syrup/Honey/Sugar
1 Tbsp Melted Butter
1 + 1/8 cup Oats
1 cup Milk
3/4 Tsp Baking Powder
Salt and Cinnamon to taste
Optional: add nuts, chocolate chips, or peanut butter
Instructions
Preheat oven to 350 degrees F and grease a 9x9in baking dish
In a large bowl, mash the banana with a fork. Add the eggs, maple syrup/honey/sugar and melted butter. Stir until combined.
Stir in the milk.
Add oats, baking powder, salt & cinnamon. Stir until combined.
Pour mixture into greased baking dish and bake for 35-40 mins, or until golden brown on top or a toothpick comes out clean.
Serve warm or chilled and top with desired toppings.
Notes
A banana is very ripe when it starts to have brown spots (Can also use thawed from frozen bananas)
If you don't have a 9x9 baking dish, you can use dishes of different sizes or muffin tins. Cooking time will need to be adjusted, watch carefully for golden brown colour and check with a toothpick.
Stores well for 4-5 days when refrigerated in an air tight container
