~2-4 Servings
~45 mins
Ingredients
1 Spaghetti Squash
1 tbsp Olive Oil
1 cup Jarred Pasta Sauce
2 Spicy Italian Sausages
1/2 cup Shredded Cheese
Salt and pepper
Instructions
Preheat oven to 400 degrees F.
Slice the spaghetti sauce in half and scoop out the seeds. Flip over the squashes and poke the outsides of the squash with a fork.
Drizzle the inside of the squash with olive oil and sprinkle with salt and pepper.
Place squash on a baking sheet cut side down, and roast in the oven for 30-40 mins.
When the squash is roasting, prep the sauce. Fry the sausage in a frying pan and break into small peices. Once cooked, add in the pasta sauce and simmer on low until squash is ready.
When squash is cooked, remove from oven and allow to cool slightly. Use a fork to fluff up the squash strings, resembling spaghetti noodles.
Pour sauce on top of the squash, top with shredded cheese and enjoy!
Notes
The squash is ready when the outside edge starts to brown, is fork tender but still slightly firm.
You can mix in cooked spaghetti noodles with the squash to alter the texture and increase the caloric density of the meal.
You can add in your favourite vegetables to the sauce such as chopped peppers, mushrooms or carrots.
Other types of meat can be used to replace italian sausage sich as ground turkey or ground beef.
