Ingredients:
2 tbsp Olive Oil
1 Onion
3 medium Carrots (diced)
1 tbsp Garlic (minced)
1 large Potato (peeled and diced)
2 tbsp Tomato Paste
30 oz canned Stewed Tomatoes
1 cup Lentils
1/2 tsp Paprika
1/2 tsp Dried Basil
1/2 tsp Dried Oregano
1/2 tsp Black Pepper
4 cups Vegetable Broth
2 tbsp Soy Sauce
Instructions:
Prep the veggies: peel and dice potatoes and carrots, mince the garlic, & dice the onion.
Add the onion, garlic, carrots, and olive oil to a large pot and sauté over medium heat until onions are soft.
Add the tomato paste and sauté for 2-3 more minutes (tomato paste will coat the bottom of the pan).
Add the potato, stewed tomatoes, lentils, spices, and broth to the pot.
Cover the pot. Once boiling, turn down the heat to low and cook for ~ 40 mins.
Add the soy sauce.
Serve and enjoy!
Notes:
The soup is ready when the lentils are very soft and tender.
You can serve the soup with toast or grilled cheese!
Make sure you add the juice from the stewed tomatoes (don't strain).
