Ingredients
3 cups All-purpose Flour
1 tsp Salt
1 tsp Baking Powder
1 tsp Baking Soda
1 Tbsp Ground Cinnamon
3 Large Eggs
1 Cup Vegetable Oil
2 + 1/4 cups White Sugar
3 tsp Vanilla Extract
2 cups Grated Zucchini
1 cup Chopped Walnuts (Optional)
1 cup Chocolate Chips (Optional)
Instructions
Preheat oven to 325 degrees F. Grease two 8x4 inch loaf pans.
Add flour, salt, baking powder, baking soda & cinnamon to a bowl and stir.
Beat eggs, oil, sugar, and vanilla in a separate bowl. Add dry ingredients and mix well.
Add in zucchini, walnuts and/or chocolate.
pour batter into prepared pans & bake for 40-60 mins or until a toothpick comes out clean.
Cool in pans for 20 mins before removing them. Complete cooling on wire rack.
Notes
Don't squeeze liquid out of the grated zucchini, the liquid keeps the loaf moist.
Use the coarse side of a cheese grater to grate the zucchini.
