Ingredients
2 cups Zucchini (finely shredded)
1/2 cup Cooking Oil
1/2 cup Honey
2 Eggs
1 tsp Vanilla Extract
1/3 cup Cocoa Powder
1 + 1/2 cups Flour
1 + 1/2 tsp Baking Soda
1/4 tsp Salt
1/2 cup Chocolate Chips
Instructions
Preheat oven to 350 degrees F. Grease a 9x13 pan. Use a cheese grater to shred the zucchini.
Add chocolate chips and oil to a glass bowl and melt in the microwave for 20 second increments and stir in between until smooth. Once smooth, stir in the honey.
In another bowl, mix together the eggs and vanilla. Once combined, stir in the shredded zucchini.
Once the chocolate mixture is slightly cooled, pour it into the zucchini and egg mixture.
Add the flour, baking powder, cocoa & salt. Stir until just combined.
Transfer brownie batter to prepared pan and bake for 22-25 mins or until a toothpick comes out clean.
Allow to cool for ~15 mins before slicing.
Notes
You can add a chocolate icing on the brownies once cooled if desired.
