Potatoes of any variety can be roasted, but these colored potatoes make an especially pretty side dish when roasted.
Line a sheet pan with aluminum foil, then grease the foil with olive oil. Rub each potato with olive oil and spread the whole potatoes out on the foil. Sprinkle the potatoes with freshly ground black pepper and kosher salt. Place the potatoes in a preheated, 400 degree F oven for 40 minutes or until they were tender.
