Hershey's Chocolate Cake
2 cups sugar
1 3/4 cups all purpose flour
3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water
Preheat oven to 350 degrees F. Grease and flour a 9 x 13 inch pan (or two 9 inch round pans).
In a large bowl, stir together the sugar, flour, cocoa, baking powder, baking soda, and salt.
In a separate bowl, mix together eggs, milk, oil, and vanilla extract. Add these wet ingredients to the dry ingredients and mix for 2 minutes
on medium speed of mixer.
Pour the boiling water into the batter. Stir in the water with a spatula. The batter will be thin. Pour the batter into the prepared pan.
For the 9 x 13 inch pan, bake about 40 minutes in the preheated oven, or until the cake tests done with a toothpick. If you are using two 9
inch round pans, they need to bake 30 to 35 minutes.
Cool in the pan for 10 minutes, then remove from pan to a wire rack to finish cooling.
