1 pound cooked shrimp, chopped (reserve a few whole shrimp for garnish)
1/2 cup fresh lime juice
3/4 cup ketchup
1 to 2 tablespoons hot sauce (Chipotle Tabasco works well)
1 teaspoon Worcestershire sauce
1 tomato, seeded and diced
1/2 small white onion, finely diced
1/2 cup (loosely packed) chopped cilantro, plus a few sprigs for garnish
1 ripe avocado
Pour the lime juice over the chopped shrimp. Then add the ketchup, hot sauce, and Worcestershire sauce. Mix well. In the bowl with the
chopped shrimp mixture, add the tomato, onion, cilantro, and avocado. Mix all ingredients gently together. Transfer mixture to a serving dish
and garnish with whole shrimp, lime slices or wedges, and cilantro sprigs. Serve with chips.
