Oven-Fried Pork Chops
4 lean center cut pork loin chops
1 egg white
2 tablespoons unsweetened pineapple juice
1 tablespoon soy sauce
1/4 teaspoon ground ginger
1/4 teaspoon paprika
1/8 teaspoon garlic powder
1/3 cup Italian-seasoned bread crumbs
Vegetable cooking spray
Preheat oven to 350 degrees F. Prepare a roasting pan with a rack by spraying the rack with cooking spray.
In a shallow bowl, combine the egg white, pineapple juice, soy sauce, ginger, paprika, and garlic powder; whisk gently until combined. Dip pork chops in egg mixture, then dredge in breadcrumbs. Place chops on prepared rack in roasting pan. Bake in preheated oven for 25 minutes; turn and bake 25 more minutes or until pork chops are done. Makes 4 servings.
