Well, I've just wrapped up one interesting culinary week. Book-ended by two Saturday's of wine tasting at Georgetown - 100 of the best wines going. Dinners?
Monday: The Rib Crib, Evergreen, Colorado. Dinner: Dry-rubbed Rack of BBQ'd St. Louis Pork Ribs.
Tuesday: The Bistro, Evergreen, Colorado. Appetizer: Lobster Pastry Dinner: Osso Buco with Toasted Risotto Cake.
Wednesday: Rio Del Sol, Evergreen, Colorado. Dinner: Carnitas Taco and Chili Relleno.
Thursday: The Little Bear, Evergreen, Colorado. Dinner: Burger with Green Chili and Jack Cheese and a side of Onion Rings.
Friday: My Kitchen, Williamsville, NY. Dinner: Shrimp Scampi with Jam-garden Herbs.
Saturday: My Kitchen, Williamsville, NY. Dinner: Pan-seared Herbs-de-Provence-Chicken Breast, with Jam-garden Collards and Brown Rice
Sunday: My Kitchen, Williamsville, NY. Dinner: Grilled Chicken on-the-bone, Quinoa and oven-roasted Carrots and Parsnips
All good stuff. Rib Crib = Classic dry-rub. Bistro's Osso Buco was remarkable (not to be confused with the other-worldly OB served at Gero) but the Risotto Cake really hit-the-spot (I gotta try to reproduce Chef-owner Brian's recipe on that.) Real Chile Rellenos, Cheeseburgers and Tamales (ok, there were lunches, too) One of the best dinner's, though, was the Herbs-de-Provence Chicken (hand filleted from the chicken to the pan) with Jam-garden Collards (picked, cut and blanched immediately) and Brown Rice (Alexis' of course). Now, I'm off to decant the stock for T-day.
