Fast and easy. A little bit messy maybe.
Ingredients:
2 Chicken breasts, tenders removed
2 Slices Ham
2 Slices Swiss Cheese
Salt
Pepper
1 Egg
Water
Flour
2 Tbsp Vegetable Oil
Tools:
Cutting board
Plastic Wrap
Heavy Frypan
Spatula
Instructions:
1.) place one chicken breast on cutting board, cover with wrap and gently pound with bottom of heavy pan to twice the size
2.) prepare flour in a bowl and egg, stirred with a little water to thin it, in a second bowl

3.) Heat oil in pan to medium
4.) Place one slice of ham across each breast and a half a slice or so of Swiss cheese in the center. Roll it longways and cup the ends to make a torpedo
5. Salt and pepper the chicken liberally, dip in egg wash, flour and place in pan seam facing down. Cook a few minutes on each side till done about 12 to 15 in all depending on the thickness of the breast
Notes:
I use Jarlsberg Swiss Cheese for everything exclusively. It is not from Switzerland, but its my favorite.
Instead of regular flour, I use Wondra. I don't like Pan Searing flour which is almost the same because most have too much white pepper.
When done, slice each torpedo and check that the chicken is not pink. If it is, place in microwave 1 minute at a time until it is done.
This chicken needs no sauce - its that good.
