Cooking Oil
1 Shallot
2 Pears
Water
2 Tbsp Sugar
Tools

12 in. Non-stick Pan

Instructions
Peel, core and slice pears into bite sized pieces.
Dice the shallot to medium.
Heat the pan and add the oil and shallot.
Cook till brown.
Add the pears and cook till brown.
Add water to cover, add 2 Tbsp sugar to taste and bring to rapid boil to convert the mix to simple sugar. Reduce the heat, thin the sauce and serve.
Notes:
Try coating the pears with chipotle or cayenne for spice. If the diners can take it, this will balance the sweetness nicely.
If spicy, serve with a Gewurztraminer.
