do this outdoors with a side burner
get a cast iron pan as hot as possible
get some grouper or catfish filets and salt and pepper to taste
melt 1T butter for each fillet and roll them in it
pour on Cajun dry rub and rub in till coated dry
place on pan and turn over when the bottom has just blackened
turn onto sides, too, for thick fish
remove when all sides are black - 5 to 10 minutes give or take - (the fish registers 130 degrees on the instant read thermometer)
serve with a cold rolling rock
