Many versions abound. This quick snack hits the spot.
Ingredients
1 flour tortilla
1 oz cheddar cheese
1 oz tomato salsa
2 pinches ground chili ancho or chili powder
2 pinches cumin
Tools
Knife
Spoon
Microwave
Paper Towel
Instructions
1. Place the tortilla on the paper towel
2. Warm the tortilla for 10 seconds inthe microwave if it has been refrigerated
3. Fill it in the order shown - cheese, salsa and spices
5. Fold one-third of the tortilla over the filling, fold the sides in, and roll it up so the filling is contained
6. Fold a point of the paper towel a few times till it reaches the tortilla, wrap the tortilla and fold down the last point over the end
7. Microwave 35 seconds.
8. Peel back and serve.
Notes
Its better with beans, but that's no excuse.
A cheddar that's too sharp might distract from the flavor.
