Ingredients
4 large Tortillas
2 handfuls of Chips (Tostadas)
1-2 oz Cheese
1 Baked Potato
4-5 Eggs
1/2 cup Meat
1/4 to 1/2 cup each of Onions & Green Peppers
Cooking Oil
2 Pinches Chile Ancho or Chile Powder
2 Pinches ground Cumin
1/2 cup or more of Tomato Salsa
Salt and Pepper to taste

12 in non-stick Frying Pan
Wooden Spoon
Knife
Instructions
1. Dice cheese, potato, meat
2. Cook meat first in the pan if required
3. Dice onion and pepper and cook in oil
4. When just starting to brown, add potatoes
5. Then, add everything else, and crush the chips right into the mix.
6. Warm the tortillas.
7 When cheese has melted, put equal amounts of migas into tortillas, wrap and serve.
Notes
This recipe for Migas, or "Messy Eggs" has been adopted from Las Manitas Avenue Cafe in Austin, Texas. The idea is to throw in what you have, and this is one I recently made. Leftover ribs from the Salt Lick, if you are lucky enough to have them, work the best :) Ham, bacon crumbles, and sausage (especially a good Mexican chorizo) also rock.
