Ingredients
32 Tomatillos, husked, cut in half
1/4 Onion
Water
6 cloves Garlic
Salt
3 Cascabel Chiles
4 Guajillo Chiles
1 tsp corn or vegetable oil
Tools
Saucepan
Steel Spoon
Nonstick Pan
Wooden Spoon
Blender
Instructions:
1. Place tomatillos, onion, and 4 garlic cloves in a 2 qt saucepan
2. Cover with water and boil 20 minutes to everything is soft
3. Remove from heat and remove garlic
4. Seed, devein and crush the dried chiles
5. lightly cook the crushed chiles in the oil in a non stick pan on medium low to fry them just a touch, mixing with a wooden spoon
5. Add them to the tomatillos and let them cool
6. Smash remaining 2 cloves of garlic with salt to form a paste and add it to the tomatillos.
7. Place mixture in blender and blend till smooth
8. Reheat to serve
Notes:
Makes about 1 quart
This is not spicy and lets the tomatillos speak for themselves.
