Ingredients
2 Eggs
Pam or spray oil
Salt
Pepper
Flour Tortilla
Mild to Medium Tomato Salsa
Tools
7-inch Nonstick Pan
Cover optional
Gas Range if possible
Instructions
1. Spay a thin film of oil and heat pan
2. Add eggs and salt to taste
3. Cook to sunnyside with cover or flip for over
4. If over, flip again
5. Grill tortilla slightly and gently over flame or otherwise heat it
6. Place the tortilla on the plate, and slide over the eggs
7. Add 2 tbsp salsa to the hot pan, give it a second, and pour it over the eggs
8. Top with pepper and serve
Notes
Serve with Black or Pinto Beans, refried or not, with some melted jack cheese. Sharper cheese, and a garnish of tostada chips is also nice. And a green chili salsa or a separate mix of green and red also rock.
Cautions
Jalapenos are ok for heat and or salsa, but do not use a smoked or heavily-flavores salsa or you will loose the flavor of the dish.
