wash and cut 2 lbs new red potatoes into thirds (cut off a third and cut the remaining part in half) and place in a bowl
onto a cutting board, remove rosemary from stems of 3 sprigs (by pulling them against the grain between 2 closed fingers)
pour some good extra virgin olive oil till it covers the rosemary, then dice the rosemary into 1/4 to 1/2 inch pieces
using the knife scrape up the rosemary oil, place it into the potato bowl
pour in kosher salt liberally and pepper to taste
using your hands, work the rosemary oil into the potatoes
place potatoes on a cookie sheet in a 350 degree oven for a half hour or until nicely browned, or better yet, over a grill (wood fired is best) with a perforated metal sheet or otherwise making sure to keep them from dropping down especially when you nee to remove them
adjust seasonings (this is cook's code for testing salt and pepper and adding more if needed)
serves 8 as part of a big meal
