remove outside leaves of iceberg lettuce head till crunchy and not limp.
cut out the solid heart
cut in half, pole to pole (IE north to south, south being the bottom where the heart was)
cut the 2 halves in half again the same way to get 4 wedges
place on plates with 2 or 3 fresh roma, cherry or pear tomatoes
cut a 1 - 2 oz wedge of good danish blue cheese and plate next to tomatoes
serve with a good extra virgin olive oil ans a good balsamic vinegar
An important note about oil and vinegar: Alot of it is not what it is marketed as, and its crap.
Extra virgin olive oil - I use Bertolli or equivalent to make sure it really is what it says, and this is about 5 bucks for a small one. It may not be that critical, but, you can get faked out, so I don't chance it; and
A good Balsamic vinegar is way harder to to find that a good wine. Buy the most expensive you can afford, but expect to spend eight or ten bucks for a bottle that will fit in your palm.
