catch or otherwise appropriate a two pound sea bass just pulled from the atlantic surf at island beach, just north of barnegat light, new jersey. scale thoroughly, fillet each side, skin on and create two half pound fillets. start a grill on low - gas is fine. place fillets skin side down on a few sheets of strong foil. sprinkle a scant few drops - really, like 3 drops - of dark italian olive oil on top of each one and spread it evenly with your finger. then shake a little salt evenly from a shaker. bake until just firm. serves two - if you want to have anything else like vegetables or wine. for me, serves one. this is the best white fish you will ever eat. and they don't need to ship it in from chile.
