Try to make duck leg/thigh confit (breast is too dry)
Oil, shallot, garlic, chipotle, cumin, coriander and brown sugar sauteed in corn oil
Griddle corn tortillas to puffy but not hard
Place duck pieces into tortilla with filling and asadero cheese
Grill 6 tomatillos and cook in saucepan with onion, garlic, ancho and a little tomato, then blend
Pour on top of duck enchiladas and serve
Be careful not to add too much sugar.
