Coming soon...really good but really authentic. A summary follows:
Clean, bake, skin, chill and process pumpkin though a mill or strainer
Make dough and chill
Make filling and cook till thick in double boiler
Roll dough and bake pie shells
Cool shell and filling a little, fill shell and bake
Cool pie and slice it
Whip a cup of heavy cream with 1 - 2 Tbsp sugar
Serve whip cream on a slice of pie.
This took a week.
