"Buttertort's" blog post said that this was her mothers cardinal rule of baking, and most people agreed. The absence of salt in sweet baked goods may have something to do with a time when only fresh butter was availalbe, and then began being dropped from cookbooks when it became salted, never to return when unsalted became available. I don't know if any of this is true, but I think it has merit and will continue to probe.
