Breakfast, of course. Although I never understood why you could eat Easter ham before the Easter feast...
3 of yesterday's baked potatoes placed with a half a large onion and 1/4 of a large pepper in some hot olive oil in a cast iron skillet, seasoned w salt & peeper and removed when browned. Then, 1/3 lb finely c hopped ham is placed in the pan with 7 eggs whipped with some water.
Serve at once. Easter as it has always been.
