Verification ensures that the HACCP plan and entire system is adequate and operating according to plan. Verification procedures may include reviews of HACCP plans, CCP records, critical limits, and microbial sampling and analysis. Verification should be done by an authority that can remain unbiased in their evaluation and can either be an internal or external party.
