Make sure to:
1. Wash hands with soap and water frequently when handling clean dishes, utensils, and equipment.
2. Keep all cutlery and dishes covered, and glasses turned upside down on clean trays or shelving, when not being used.
3. Hold plates from the underside or use trays to serve, in order to avoid placing fingers in food. (Avoid gripping the plate at its side, with your thumb on top of the plate).
4. Serve drinking cups by the handle. If no handle is present, grasp cups as close to the bottom as possible. Never put your fingers over the cup's rim.
5. Handle all utensils (whether single or multi-use) by the handle area. Never hand a customer a fork, knife, or spoon by touching the mouth-end.
6. Discard old food and single-service items.
7. Use clean cloths and towels with sanitizer to wipe tables after use, and if linens are used, change between settings.
