Hot Holding: Video Review Tips
As seen in the previous video, some simple tips for hot holding food safely include the following:
1. Stir & rotate food in trays often, to ensure every part is maintained above 60°C/140°F
2. Use lids to prevent heat from escaping
3. Check and record temperature readings of the food and the water every two hours, and discard if food is not maintained at 60°C/140°F or above
4. Check & replenish water levels periodically and ensure sufficient water exists to maintain contact with food trays
5. Transfer food directly from the oven or stove into the unit to maintain adequate food temperatures and avoid contamination
