Chlorine is unique among sanitizers as it evaporates more readily with time and increased exposure to air, therefore, losing its strength. As mentioned, different concentrations will be required, depending on whether sanitizing is done in the sink/dishwasher (100ppm) or using the clean/sanitize-in-place method (200ppm).
For 100 ppm: Mix ½ tsp. (2.5 ml) chlorine per liter of water.
For 200 ppm: Mix 1 tsp. (5 ml) chlorine per liter of water.
Remember to store Chlorine solution in a spray bottle and/or in a bucket. Chlorine solutions stored in a bottle for later use must be capped to prevent chlorine from evaporating, and solution must be tested using chlorine specific test strips, and changed daily. Chlorine solution held in a bucket or sink must be changed approximately every 2 hours to maintain strength and effectiveness.
