Shh....as a consumer we want to give you a secret tip: If you want to ensure the food you buy is the freshest, grab from the back of the storage unit/shelf. Food producers comply with the "first-in-first-out rule" which helps them get rid of food approaching its expiry date first. Some additional storage tips include:
Store all food, food-contact equipment, and utensils on shelves and pallets at least 15cm/6 inches off the ground, to protect from contamination and encourage cleaning
Stock all temperature controlled units with accurate and easy-to-read thermometers
Ensure all food is dated and stored according to best before dates.
Avoid over-stocking food items. Stock and use foods according to the first-in-first-out rule (FIFO)
Keep going to test your storage skills.
