As food travels through different stages, each stage can act as a point of entry for contamination. These stages are also referred to as the Food Safety Sequence. After receiving and storage, the sequence involves:
Freezing
Thawing
Refrigeration
Cooking
Room Temperature Holding
Hot and Cold Holding
Cooling
Reheating
It is important to note that not all foods will go through all stages of the sequence, and some may go through the sequence in a different order. Regardless, there are different measures a food handler can employ at each stage of the sequence to minimize risks and enhance food safety practices.
