Dry storage often involves the storage of bulk items such as dried legumes, grains, salt, sugar, and flour. Many of these items are held in larger containers and do not require temperature controls, and are, therefore, stored at room temperature. It is important with dry storage that all goods are kept in food-grade containers or bins (metal or food-grade plastic), and covered with tight-fitting lids and/or food approved covers. This will help protect food from physical contamination. It is also important to check dried goods periodically to ensure they are free from debris, rodents, and insects.
