Preparation: Quaternary Ammonium & Iodine
Although chlorine is the most commonly used sanitizing agent in a food premises, Quaternary Ammonium (Quat) and Iodine are increasingly becoming favorites. To prepare both iodine and Quat, follow the manufacturer's instructions to obtain the required concentrations (Quaternary Ammonium (200ppm), Iodine (25ppm). Many times, these two sanitizers will also come premixed by the manufacturer. When chlorine is used for a mechanical dishwasher, it too will often come premixed and dispensed automatically during the sanitizing rinse cycle.
