When food is kept on display (i.e. individual cookies), ensure items are protected from contamination through the proper use of sneeze guards, covers, containers, and packaging. This will help keep food on display protected from physical materials and chemical contamination during routine cleaning, and possible germs transferred from the environment and customers. Ensure temperatures of food on display is monitored regularly, keep it out of the danger zone, and discard old food, before replacing it with new.
