Sanitizer Concentrations: Approved Chemicals
Approved chemical sanitizers must be used at the following concentrations to be effective. These numbers are important, so do your best to remember!
Chlorine @ 100ppm – (in sink or mechanical dishwasher)
@ 200ppm – (outside the sink/clean-in-place)
Quaternary Ammonium (Quat) @ 200ppm
Iodine @ 25ppm
*The clean-in-place method is used when a piece of equipment or surface is too large and cannot be submerged under the water in the sink, therefore, it must be cleaned and sanitized in place. Because chlorine evaporates with exposure to air; a greater concentration of chlorine is required outside the sink, in order to ensure chlorine concentration remains adequate and contact time sufficient to kill pathogens.
