Common Causes of Cross-Contamination
Cross-contamination can occur in many ways. 3 of the most common include:
1. Food-to-food - raw hazardous food and/or its juices (i.e. raw poultry) come in contact with cooked or ready-to-eat food like lettuce.
2. Equipment to Food - Food is contaminated by direct or indirect contact with equipment. (I.e. The same spoon is used to marinate raw steak and then mix salad).
3. Hands-to-Food - Contaminated hands come in contact with food. (I.e. you handle raw chicken and then prepare a salad directly after).
