Recall how we mentioned earlier that illness can be transmitted directly or indirectly from an infected person, animal, and/or the environment? This makes it easy to spread disease from one person to another. Therefore, food handlers who are ill must inform their managers immediately. If presenting with symptoms such as coughing, sneezing, and/or diarrhea, you must stay home from work, or request to be assigned to a non-food handling task, if possible.
