Hot Holding
If you want to keep food hot after cooking, transferring to a hot holding unit is a safe way to store food. Hot holding units come in a variety of styles, with food often stored in trays that are heated from the bottom. You may have seen a hot holding unit at a buffet, or at a take-out counter! Hot holding units often use boiling water and steam to keep food hot (above 60°C/140°F) for prolonged periods. Water and food temperatures must be monitored to ensure food remains 60°C/140°F or above.
