Perfect Roasted Butternut Squash

  • 1 butternut squash (approximately 3 pounds), peeled, seeded and cut into 1 inch bite size pieces
  • 2 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil
  • salt and pepper to taste 
Preheat oven to 400 degrees F.

Place cut butternut squash in a large bowl, drizzle with olive oil, add minced garlic, salt and pepper and mix well, making sure to coat each piece. Pour squash in roasting pan or baking sheet in a single layer. Place on middle rack of oven and roast for 25 to 30 minutes, turning one time halfway through roasting - roast until tender and squash is lightly browned. Enjoy!
