Egg-Free Chocolate Chip Banana Bread

  • 3 overripe bananas
  • 1/4 Cup vegetable oil
  • 1 tsp vanilla
  • 1 Cup sugar
  • 2 Cups flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 cup choc chips - mini or regular *choc chips are optional


Preheat oven to 350 degrees F.  Spray loaf pan with non-stick cooking spray.

In a large bowl, mash your bananas well. Next, add oil, vanilla and sugar - mix well.  Next, add flour, salt and baking soda.  You can sift all three together if you like, I never do, I just add them on top of the banana mixture and it always turns out great. Mix wet and dry ingredients until they are just blended, DO NOT OVER MIX.   Last, add your Chocolate chips - again, do not over mix.

Pour mixture into loaf pan, place on middle rack of oven, bake for 55-60 mins. Check with toothpick to make sure it comes out clean.  Let the bread cool for 5 mins then remove and place it on a cooling rack.  Once it's done cooling, dig in!

*The chocolate chips are optional.  If you prefer, you can add nuts (pecans/walnuts) - OR add both Choc chips and nuts. You can also keep it simple and just have plain banana bread.
