1/2 c. butter
1/2 c. sugar
1/2 c. brown sugar
1 egg
1/2 t. vanilla
1 1/2 c. flour
1/4 t. salt
1/2 t. baking soda
1/4 t. cream of tartar
Cinnamon sugar for rolling:
2 T. sugar
1 t. cinnamon
Cream together the butter and sugars on high speed. Add the egg and vanilla and beat until combined.
Add dry ingredients and mix well. Chill dough in the fridge for an hour.
After the dough has chilled, preheat oven to 300 degrees.
In a small bowl, combine the sugar and cinnamon for the topping.
Take about 2 T. of the dough and roll it into a ball for each cookie. Roll in the cinnamon/sugar mixture and place onto a parchmentlined cookie sheet. Slightly flatten each ball.
Bake cookies for 12 to 14 minutes. Cool on a rack.
