1 3/4 c. flour
2/3 c. sugar
2 t. baking powder
1/2 t. baking soda
1/4 t. salt
1 1/2 c. mashed ripe banana
1/3 c. shortening or butter, softened
2 T. milk
2 eggs
1/4 c. chopped nuts (optional)
In a large mixing bowl combine 1 c. flour, sugar, baking soda, baking powder, and salt.
Add mashed banana, shortening, and milk.
Beat with electric mixer on low speed until blended, then on high speed for 2 minutes.
Add eggs and remaining flour, beat till blended. Stir in nuts.
Bake in loaf pan for 55-60 minutes at 350 degrees or until toothpick is clean.
Cool for 10 minutes on rack, then remove from pan.
