ground beef, shredded chicken, and/or black beans
flour tortillas
shredded cheddar and/or Monterey Jack cheese
Brown the ground beef and add taco seasoning to taste.
Shred cooked chicken breasts and add 2 T. water and taco seasoning to taste.
Drain about half of the liquid from a can of black beans and add taco seasoning to taste.
Spray the bottom and sides of a baking dish (8x8 or 9x13 based on how many you are making).
Spoon the filling of your choice into flour tortilla shells and roll. Place seam side down and pack snugly into the baking dish, filling the entire dish.
Pour the entire can of enchilada sauce over the top of the rolled tortilla shells.
Top with shredded cheese and bake at 375 degrees for approximately 20 minute or until cheese and sauce are bubbly.
If you can wait, allow 5 minutes for sauce to thicken before serving.
Serve with lettuce, diced tomatoes, salsa, sour cream, and/or more shredded cheese.
