3/4 c. butter, softened
1 c. sugar
1/4 c. molasses
1 egg
2 t. baking soda
2 1/4 c. flour
1/2 t. ground cloves
1/2 t. ground ginger
2 t. cinnamon
1/2 t. salt
3 oz. crystallized ginger, chopped coarsely (approximately 1/2 cup)
In a large mixing bowl, combine butter, sugar, molasses, and egg. Mix until smooth.
In a medium bowl, whisk together the flour, baking soda, and spices. Stir into the wet ingredients and mix well.
Fold in the chopped ginger and chill for at least one hour.
Preheat oven to 375 degrees.
Roll the dough into 1 inch balls and gently roll in granulated sugar.
Bake on a parchment or silicone lined baking sheet for 8-10 minutes.
Cool on cookie sheet for about 5 minutes before moving to wire rack.
Makes about 36 cookies.
