1 pkg flour tortillas
4 c. cooked chicken, shredded
½ c. vegetable oil
½ t. cumin
2 c. chopped tomato
½ t. thyme
1 c. chopped onion
¾ c. chicken broth
2 c. fresh jalapeños, chopped
salt and pepper to taste
Heat oil in a large skillet. Add tomato, onion, and pepper. Heat for 3 minutes.
Stir in chicken, thyme, cumin, and broth. Add salt and pepper.
Simmer for 15 minutes. Serve in heated tortillas with grated cheese.
