1 1/2 c. flour
1 t. ground cinnamon
1/2 t. baking soda
1/4 t. salt
1/4 t. baking powder
14 t. ground nutmeg
1 c. sugar
1 c. finely shredded unpeeled zucchini
1 egg
1/2 c. chopped walnuts
1/4 c. cooking oil or applesauce
1/4 t. lemon zest
In a mixing bowl combine flour, cinnamon, baking soda, salt, baking powder, and nutmeg.
In another bowl combine sugar, zucchini, cooking oil, egg, and lemon peel. Mix well.
Add flour mixture and stir until combined. Stir in chopped nuts.
Bake in greased loaf pans at 350 degrees for 55 to 60 minutes.
Cool 10 minutes on rack, them remove from pan and cool.
